Mac Studio: Multiple monitors with Microsoft Remote Desktop

Hello - I am interested in purchasing a Mac Studio, primarily because it can run multiple monitors (up to 8, depending on configuration). What I want to do is configure a Mac Studio with 6 monitors. I want to run Microsoft Remote Desktop, and log in to a Windows VPN and use TWO OF MY MONITORS on the VPN. The other 4 monitors should run/display programs on my local machine.

Is this possible? If so, how do I set it up?
