How Do I Stop my iPhone from Defaulting to Apple Music After an Interruption iOS17

I’ve had an iPhone for years, but I just recently upgraded to an iPhone 12 earlier this week. I like to listen to music at all hours of the day. If I’m listening on Spotify and then watch a video on Youtube, watch someone on Twitch, or engage in any other action that interrupts my music, my phone will automatically switch my miniplayer to Apple Music (i.e. if I press play on my headphones it will start playing completely different music). On previous phones, my iOS devices would default back to whatever service I was using immediately prior to the interruption, but now it seems that it always goes back to Apple Music. Is there a way I can change this? It’s a minor inconvenience, but certainly not something I want to encounter every day. Thanks in advance for the help!
