I am upgrading my iphone (xs max to 14) and would like to keep using both for myself temporarily (the reason is not relevant). Is it possible to transfer all data, apps etc. except for a couple of apps that I want to keep using on my old phone? TIA.

You can transfer all of your data and settings to a new phone. Nothing is removed from the old one. Your active SIM card can only be in one phone at a time, so only one phone is going to ring when there is a call to your number. You can put a new SIM in the other and use both though. Cloud based apps can share data, everything else runs independently after the transfer.
