I have several bank cards in my digital wallet which worked fine via Apple Pay. For some reason the app has stopped working, even though the cards still work when used independently from the phone. Any suggestions

When you say “the app is not working” at what stage in attempting to use it fails? When held near the EFT Pin Pad device in a retail store does the app open showing your default card? Or to the contrary do you not see the app opening at all?
If your iPhone is automatically opening the wallet app and showing your cards when holding near the EFT Pin Pad device then it would seem your near field communications is working. If the display is showing one card then the display should also be requesting you to double click the sleep/wake button if Face ID is typically used or if not requesting a double click the display should be asking for your phone unlock code.
The cards come up as normal, but when held up near the card reader nothing is happening. Tried different cards in different stores
