Apple Notes App Font Color HELP (Specifically with collab notes)

My sister and I collab on Apple Notes and have tried using font colors on our Macs ( I don't think you can change the font colors in notes on IPhone or IPAD). We both have editing capabilities for the notes we collab on, but the problem nI am running into is when I select "Licorice" it turns our font white, and when selecting "snow" it turns the font black. This only happens for the top row of colors (white, greys, black). Her colors seem to be correct, as when she clicks one color, it displays that same color. When one of us types, it will make the font either white or black, but there seems to be no rhyme or reason to which color it chooses, therefore, both of us see different colors at different times. It seems as though the issue is on my end, given the colors don't line up to what I am selecting, but we can;t figure out how to fix this. We have tried:

1) Updating every device we each own that has the notes app

2) Both using dark mode for each note for consistency

3) Turning on "increase contrast" on all our devices

4) One of us being the only one typing at a time

Not sure if this makes sense, but would love ANY ideas. We both love color coding the notes and using them every day, so would love a solution. Thanks!
