I deleted it but my iPhone STILL collects some data related to it. But I did accidentally discover how to delete the app. Not just hide it, not just delete the data, but delete it. They said it couldn't be done. Well I don't believe it's ever really gone but seems to be.

Yes you can delete the Health app as it is one of the many apps that can be deleted from your phone.
You can't delete the following Apps from the iPhone
Photos, Camera, Clock, App Store, Health, Wallet, Safari, Phone, Message & Find My apps.
Check for it under the App Library. Next to the last page of the Home Screen. If it is in the App Library Touch, Hold and Drag the icon to Home Screen. That's it.
The Health is an App which definitely can be deleted as long as the phone is on iOS 14 or higher. So it's not surprising you were able to do so.

awesome thanks. I was told I cannot delete those and was able to figure out how to delete most of the apps I didn't want but was having trouble with the Health app. My latest phone is a 13 though. So I'm glad to know iOS 14 and up lets you delete those.
