Problems with CarPlay & voice recognition when texting

Since upgrading my iPhone to SE, I have had problems when using Siri to send a text message when attached to CarPlay. I get the voice command "what do you want to say to "name of contact"?" then I dictate my message. Previously, it would repeat my message back to me before sending but now it doesn't. Then later, when I look at the message thread, the message actually sent reads "what do you want to say?" and then the message that I dictated.

So, for example, when I dictate the message "I'm leaving now", the message sent is "what do you want? I'm leaving now"

How can I correct this issue?
