Change Organizer
I am trying to change the organizer because they no longer have Apple, I still have Apple and I want to be the organizer for the family sharing. How can I do that?

You would need to disband or leave the Family Sharing group and create a new one yourself to be the Organizer. There is no way to change the organizer on an existing Family Group.
