Every time I email the receiver can see my name and email address how do I remove it on a iPhone 14

iOS 17 hide my email Apple’s directions for Hide My Email on an iPhone on iOS 17 are wrong. Path and options available in older iOS versions are different in iOS 17. Is there a place where I can get correct info?
