I currently have a iPhone 6 SE and the name of the phone keeps changing for example if I want to name it "John’s iPhone" it’ll set but any time I check back to see if the name stays it just goes back to "iPhone", help anyone?

What do you see when you look at your devices name, elsewere?...
Apple Account:
Ge here, and see what is seen as this device's name. Check your Apple ID device list to find where you're signed in - Apple Support
Router Devices:
If you log into your router, you may be able to see this as a connected drive, along with its name. So, what do you see when you log into your router? Enter the Default Gateway into the Address Bar of your Web browser, and press enter/return, to get into your router:
