Wondering where you are viewing the light gray text ... (eg, in a document you're writing, or in a particular app)
Eg: Format text in documents with fonts on Mac - Apple Support
says:
- Select the text you want to format, then
- Change the font color: Click the Text Color button, then select a color in the Colors window.

Else to change a displayed color:
You may want to experiment with the color filters
