My fiance forgot their iPhone passcode, and their apple id and email passcode were saved on their phone. We cannot reset it without that email. If we take it to a store to wipe it we will lose access to the gmail forever and lose all iCloud data. How do we get back into the iPhone without losing all of this?

Are you saying that, in addition to forgetting the iPhone's password, you've also forgotten the Apple ID password? And what makes you think you will lose access to Gmail by resetting your iPhone password? They are not connected.
If you don't know the Apple ID and password to the phone, taking it to an Apple Store isn't going to do much good. You need to go through the password recovery process.
