How can I change the color of the menus in Apple pages new version? the yellow color is awful.

I have a new MacBook Pro (April 2024) with Pages (13.2?) The menu options are now a yellow-orange color. I know how to change anything inside the document; I want to change the color of menu items I see on my screen. I want these objects to appear blue...

That is controlled by Apple menu > System Settings > Appearance > Accent Color.

Note that setting applies to all apps, not just Pages.
