how does Apple wipe the data on trade in devices?
my company has several old macs that we are retiring. However our security team wants to know how Apple wipes the data from any machines traded in to them.

Apple doesn't do that, it needs to be done beforehand by the user as outlined here What to do before you sell, give away, trade in, or recycle your Mac - Apple Support
