DO NOT want to use AirPrint with my Epson SC-P700. How do I prevent this from automatically happening?

With my previous Epson SC-P600 I used a cabled print driver instead of AirPrint as it gave me more control over print settings and options and I found that the AirPrint driver by comparison was putting too much ink on the page.

I have just bought the SC-P700 as an upgrade and I can't find a driver other than the AirPrint driver and Epson have just directed me to the standard driver set up.

Can anyone advise me?

iMac, OS X 10.11

Epson has a Sonoma driver for the SC-P700 -> SCP700_Lite_64NR2_NA.dmg

It's on their support page - https://epson.com/Support/Printers/Single-Function-Inkjet-Printers/SureColor-Series/Epson-SureColor-P700/s/SPT_C11CH38201?review-filter=macOS+10.15.x

(If the link doesn't work follow this path: Support > Printers > Professional Imaging Printers > SureColor Series > Epson SureColor P700.

Note: if you have already set up the printer in your Mac, remove it. Then download & install the Epson driver. When you set up the printer be very careful to select the Epson driver, not Airprint. You may even get a pop-up later asking if you want to use Airprint; of course, say no.)

Note: Epson downloads pages can be wonky. If you don't see an option to select your version of macOS you may need to reload the page (multiple times...) Sometimes I even have to switch browsers to get it working correctly.
