Hi i do have a iphone pro max which is not showing an esim option can i buy apple watch can i use it by my phone

Yes. eSim support on your iPhone is not required.

Phil0124 is absolutely correct. Apple's been selling Watches since before eSIMs were the norm, and they work just fine.

Also … unless you have a Chinese-market iPhone, it most assuredly WILL accept eSIMs.
