How can I erase my own M1 Mac & choose Ventura?

After try numerous time to make a bootable of Ventura, & being told after nearly downloading the OS that because I have mistakenly install Sonoma I can not down load Ventura? What if I needed Ventura for another Mac? Any way I call this not being able to erase my own Mac & reset it to factory settings because if I could I could then install Ventura as I WANT to. Did I buy my Mac so as Apple could control it? NO!
