The person that stole my iPhone 12 Pro has moved around and must be switching my phone on and off so i am getting 40 minutes notifications later of their location on Find My online iCloud. How do i know if lost mode is activated for sure on my iPhone? I also clicked the erase function and it went on pending but now its giving 2 options whether to cancel erase or remove device?

Erase Pending indicates the device is not connected to the internet.

See the pic below. You will see the message "Erased on <Date> <Time>" when you log into https://www.icloud.com/find/
Do not remove your device from your account.
Don'ts
If you remove the device from your account after you erase it, Activation Lock will be turned off. This allows another person to turn on and use your device.
An example of my iPhone 5 is given in the GIF below. There is no "Undo" after you remove it from your account.
If you activated lost mode most of the times it is activated. For the erase function it wants your confirmation that you really want to erase it and that you want to remove the device from your account
