Do I need to upgrade to the version after Sierra first and continue upgrading up until Sonoma or how?

Assuming your machine has the hardware to run Sonoma:

No you don't need to upgrade every version between your current and the Sonoma. You can just go straight there.
How? Make a back up. Make two. Never update anything without at least one back up. The download the installer and follow the instructions.
