I wanted to take your advice: I have an Apple iMac late 2017 27” intel i5 7th Gen 3.4 GHz Quad Core so could you please help me know how much I can upgrade the CPU by. E.g. since we have i5 7th gen, what is the latest gen we can upgrade it to, to make it the most fast.

CPUs can’t be upgraded on Macs. The only way is to buy new/refurbished/or later model used.
The way to get a faster iMac, is to replace that iMac with a used 2020 27” i7 or a new 24” Silicon model.
Another option, is to get a Silicon Mac mini or Mac Studio and use a 27” or larger aftermarket external display.
How about if you download & run Etrecheck Pro and post a copy of the report here? It will provide diagnostic information about your Mac that may reveal why it may not be running as fast as it could or as you would wish.
After it generates a report, export it from Etrecheck via Share and copy/paste the report here using the "Additional Text" button in the formatting bar below your post.
If that Mac has a 1 TB Fusion Drive – instead of a larger Fusion Drive or a SSD (flash memory) – you may want to consider getting and starting up from an external SSD. 1 TB Fusion Drives in 2017 Macs only had 32 GB of SSD storage.
