I added money to Apple pay wallet through UPI. Money got deducted and transaction is showing successful in bank app and statement. However, it is not reflecting in Apple pay. There is no order id, recent purchases, history for this transaction. Where did this money go? How can I get it back?

Apple Pay has no balance. Its merely a payment conduit. You cannot add any money to Apple Pay. Also, If this UPI is Unified Payment Interface available in India, be aware Apple pay is not actually supported in India, so its a bit confusing what you did exactly?
Did you maybe add it to Apple Cash(different from Apple Pay, must be a US citizen or resident for this) or did you add money to your Apple ID balance? (This is completely unrelated to Apple Pay)

Ack. Thank you for the details. I can't see this money in my Apple id balance. I didn't get any receipt too. Should I contact support for this? Where I can raise this concern? Money just got vanished in thin air.
Then contact Apple Support directly. You will need to explain clearly and in as much detail as possible what you did.
