The only subscriptions that you can try out and cancel if you do not like them are free trials. Those need to be cancelled 24 hours before the trial period ends.
In order to sign up for a subscription, you need to double click the side button with the cost showing on the screen, followed by verification using Face ID or Passcode. This is not something that is done by accident.

Nobody here can say- generally, all sales are final and refunds are considered exceptions.
