I recently connected my G utility external hard drive, and it only shows my Mac backups; I am not able to see/find photos and videos anymore. Why is it doing this?

What do you mean, it only shows your backup?
Do you mean that you erased everything else on the disk in the course of preparing it for backups, or making backups onto it?
Or that there are photo and video files there that you can see, in a library or catalog, and that you don't know how to access that library in Photos, Lightroom Classic, etc.?
