You've probably activated Voice Control: Use Voice Control on your iPhone, iPad, or iPod touch - Apple Support. If you want to keep using this functionality and not see the numbers, disable "Overlay" in Settings > Accessibility > Voice Control. Otherwise, disable Voice Control in the same screen.
