Will a 30w USB-C charger damage my iPhone 15 Pro Max?

I have a MacBook Air M1 with a 30w USB-C charger, and an iPhone 15 Pro Max.

Is there a danger of overloading the iPhone by charging with the 30W transformer please, or is it always regulated to the correct voltage by the cable?

The phone will tell the charging device what voltage to output, the phone will only draw the wattage it needs. You can't over volt or over current your phone.
