My iCloud mail accounts keep disappearing from Mail

Ever since I created a custom email address using my iCloud+ account, all my iCloud mail accounts have an almost daily habit now of disappearing when I'm drafting a new email. So mail then defaults to my Gmail account. Frustrating. I get around it by manually adding back my main iCloud account into my mail accounts preferences, which temporarily fixes the problem, but the following day that field is blank again and I have to go through the same motions, using the + sign to reinsert my email.

Anyone know why this is happening and how I can prevent it?
