The best way to make sure your Apple Watch does not light up while you’re sleeping.
1- control center on your watch
2- click on theater mode, that’s the two faces side by side, icon
3- this will prevent your Apple Watch from lighting up while you’re sleeping and keep it in dark mode, even if you have “always on” set up.

I use "Sleep mode" on my Apple Watch Ultra 2, and the display of the watch stays dark during sleep, unless I tap on it or turn the Digital Crown. Even if the display is on, it only shows a black background and the time in a green color.
