Your M3 MacBook Air should be recent enough that it can act as an AirPlay Receiver. However, I don't know how AirPlay works (if it is supported at all) on the Apple Watch side. I'm only seeing references to Macs, iPhones, and iPads as devices that can send audio and video via AirPlay.

It looks like there is some form of AirPlay on the Apple Watch.

Given that, if you already have both the M3 MacBook Air and the Apple Watch, my advice would be to try setting up the MacBook Air as an AirPlay Receiver, and then AirPlaying to it from the Watch.

If you don't have an Apple Watch yet, but want to know if this would work, then maybe go to a store that carries the Watch and ask the salespeople there to demonstrate / verify the feature for you.
