I normally use Zoom, MS Teams or Google Meet. I am unable to activate my microphone all of a sudden. I have tried using Settings > Privacy & Security > Microphone but there are no apps listed there. Nothing at all ! Anybody got advice?

Try deleting the app and re-installing it. When you first launch it again, it should ask for approval for a variety of things.
You might also take a look at Settings>Screen Time>Content & Privacy Restrictions>Microphone and make sure it's set to Allow Changes.
