Apple Watch sleep screen all white numbers. Why?

With sleep focus turned on, my Ultra 2 switches to Apple’s dedicated sleep screen, which is great because the screen goes dark, saves battery and less distractions.

However when you press the crown to check the time, the display is all white numbers! Why? There should at least be a setting for this to turn it all dark red like you can with any other watch face.
