The 20W USB-C Power Adapter is ideal for your new iPad - this being the Power Adapter that would have have been included in many countries outside of Europe.

Should you choose to do so, a 30W or greater USB-C Power Adapter may be more useful - as, should you connect a USB-C hub or other USB peripherals to your iPad (as is perhaps likely), you will have a greater power budget.

A connected USB-C hub can itself require 5-10W, while other connected devices will themselves draw power. A Power Adapter with sufficient power output will be able to supply sufficient power for connected devices, while providing required power for fast-charging the iPad.

If selecting a third-party USB-C Power Adapter for Apple devices, ensure that it supports USB PD (Power Delivery). All Apple USB-C Power Adapters support this standard.

Be aware that your iPad will require a USB power source of at least 12W (2.4A @5V) to reliably charge. Fast charging requires a USB PD source capable of 20W or greater.

20W USB-C should work perfectly, and it will not cause a problem if the adaptor has a higher maximum rating. The iPad controls the power taken from the adaptor. I'm using the 30W and 35W dual output adaptors mainly for convenience when I travel, and finding hotel rooms without enough power sockets, and for international travel they use the interchangeable duckhead adaptors in the travel kit.

Update: You could probably even continue to use the old power adaptor and cable, if you can tolerate slower charging. In the car I'm using this Lightning to USB-C adaptor to charge my iPhone 15 Pro Max and I think it would also work to power a new iPad. (The reason for this is because the car has USB-A outlets, and I could not find a USB-A to USB-C cable to power the phone).
