Is there a shortcut button to swap between my eSIM and SIM card for making calls on iPhone?

Hi, when you setup eSIM you will have a Primary and Secondary number. When you open the phone app > Keypad you will see at the top of the screen a button marked Primary toggle this to select your other number. This is Apple’s support page Using Dual SIM with an eSIM - Apple Support (AE)

There is no shortcut button by default on an iPhone to switch between an eSIM and a Physical SIM to make calls.

Create this Shortcut as shown in the pic below. That will fulfill your requirements.

I have tested this and runs with ease. The step 10 and 11 will allow you to choose between an eSIM and a Physical SIM. In this case, BSNL is Physical SIM and Airtel is eSIM.
