How do I pair my Apple Watch to my iPhone 12 Pro?

So for some background, I had to switch to using my 12 Pro after having a 13 Pro Max. I haven't used my watch since doing that, but the iPhone was backed up and updated to match everything that was on my 13. My watch shows up under my signed in devices so it's connected to my Apple account still. The watch is turned on and charged, but when I open my watch app, no watch shows up. When I try and re-pair the phone with the watch, it says it's "unable to connect apple watch". I'm not really sure what my next step here should be, whether I should try and remove the device from my devices or not.

Follow the steps in the support document linked below to un-pair it from the iPhone 13 and pair it with the iPhone 12.
