I cancelled my premier bundle, keeping storage. Then we decided we needed apple tv back so we subcribed to it separately. Now I want my music back. So if I resubscribe for the bundle, what happens to what I already paid for the month for storage and tv? Will I be charged the full 37 even though I had just paid for the other two this week?

Yes, you will charged the full price of Apple One. But the other subscriptions will be automatically cancelled and a prorated refund issues for the unused portion of them.
