FOUND THIS FIX THAT WORKED FROM USER -> ltshaw711:

I used my iPhone in notes to find that I had two folders that had zero (0) items in them. I removed them via my iPhone, and then let them sync up to iCloud. Then I used my MacBook Air to turn off sync to Notes in iCloud, and then restarted the Notes App on the MacBook Air. I then turned on iCloud sync for Notes again until all the Notes were repopulated. No longer crashing. Thankyou to the community and especially user ltshaw711.
