How to get rid of all CATEGORIES in iPhone 12 Pro Max

I’ve got an iPhone 12 Pro Max and there are about 10K photos and I can’t find anything. I’m sure you folks have seen someone like me. If I’m looking for a photo and it wasn’t one taken in the last few days, I’ll probably never find it.

I was trying to fill out a license renewal and I can’t remember my vehicle license plate number. I’ve taken a few pictures of it and I can remember part of it. I searched for “license” and “licence.” I got zipppo. So now I have to browse 10,000 photos and I think I’ve saved a photo of it, a few times, perhaps 2,3 or 4 years ago.

But I go to the photo app and I’m in a bunch of categories! Every bloody category I could think of. How do I eliminate all of the collections? I don’t remember creating them and yes, they are helpful but most of the time they slow me down and prevent me from speed scrolling to a time that I hate or like. But at least I might recognize the general time, year or month. But the other categories are roadblocks. I don’t know if it’s a Memory or a
