updating iPhone 11

I have connected my iPhone to my macbook pro and followed the instructions to restore it to its factory as I want to give it to my son. It gets to the end of the process and stops with the one of two messages

The iPhone (iPhone) could not be updated. An unknown error occurred (75). 067E.004B or . . .

The iPhone (iPhone) could not be updated. An unknown error occurred (1007). 1303.FFF

I have followed the FAQ suggestions and I have tried it on both my Macbook Pro and my work iMac and on both it downloads the update and then starts the process and when the bar gets close to the finish line the error comes up.
