Hi I have an iPhone 13 Pro Max and a pair of AirPods Pro 2nd gen and I’m not sure which is the difference between always on/automatic at the music Dolby atmos settings of the phone.

The difference has to do with data usage. When on automatic, when you;re on mobile data it could be that it not uses Atmos due to data perservance.
If you’re on always, it will always use atmos, no matter if you’re on wifi or on mobile data
