Don’t add any payment methods (credit or debit cards) to your Apple Wallet. The cards are your cards, just don’t add them to your iPhone. If you’re bothered by a prompt to setup Apple Pay, just turn off Notifications for Wallet & Apple Pay in Settings on your iPhone.
