In Word for Mac, I want to apply the style separator function that is available in Word on Windows.

Is this (yet another useful) function that Microsoft has not made available to Mac users?

Not every feature that is in the current Office 2021 Professional Plus for Windows is available in the macOS release of Office 2021 for Mac, or their Microsoft 365 counterparts. That is a question for Microsoft as has been stated elsewhere.
