My Apple Watch records when I'm out walking around, but not when I'm out dancing with a partner, though the effort level is similar. In the case of dancing, though, I don't cover a lot of ground, and what I do cover is mostly stepping backwards. Is there something I can do to get the watch to pick up on this activity?

If it's not too disturbing, you can start the workout when you enter the dance floor, and pause it in-between, if necessary.
Moving your arms and taking steps back and forth will also help you close your rings, without starting a workout.
I'm afraid you'll have to start this workout type manually.

If you have an estimate, how many calories you burn during dancing, you could add this data manually to the Health App:

Thanks. I assume you mean just setting it on the Dance icon and letting it run for however long I'm at the dance event, right? Not ideal, since it buzzes me between dances, but I can do that.
That would be a bit awkward. My arms do move, and I'm definitely taking steps back and forth, but the watch records very little, hence my frustration.
