Why and how did emojis appear next to someone’s name? I did not do it and no one had my phone.

If that person sent you an iMessage and they made changes to their name in the Contacts of their device, you will see a message on the top of the screen asking you if you want to update the info from the sender. You may have inadvertently allowed this action or did not understand that it was also going to change the name of the person in your Contacts.
