I bought the Apple Watch in Brisbane, Australia as a gift for my boyfriend, and the receipt was in my name, but now I want to change the receipt's name to my boyfriend's

If you bought it at an Authorized Apple Reseller or Apple Store, and they can not change the address, there is no other way, sorry.
However, even if the receipt has your name on it, the receipt is still a valid document to prove the ownership.
The document for the Proof of ownership must include the product serial number, IMEI or MEID.
You also can't get a purchase receipt in your name, if you buy an Apple Watch from another user, that has disabled the activation lock, so it can be set up for a new owner.
