If I transferred funds from my apple pay wallet to my bank on a Thursday will they reach my
bank by Saturday or should I expect it on Monday?

In my experience the major banks (Chase, Wells Fargo, Citi, BofA, Goldman, US Bank, PNC, Truist,) show the deposit in 1 business day. Smaller, local banks tend to be the slowest at 3 business days. The transfer is done over the ACH network.

You are usually notified that it will take 1-3 business days for the transfer. I am also always offered an instant transfer for a service charge fee.
Thanks, I transferred to Capital One so I can probably expect it by COB today or sometime tomorrow. It has a 'Cleared' status in my wallet, I typically do instant transfers but didn't want to pay the service fee.
Correct, I was more so asking due to the day of the week, I decided against the instant transfer because the service charge on the amount of the transfer was something I did not want to pay
