when I signed in to my gmail email today , google emailed me a security warning asking me if I recently signed in on a Mac device . I did not know if an iPad is considered to also be associated with a Mac , is it possible someone has access to my Apple ID and device info linked to my iPad ?

The alert that you have seen is entirely benign.
Some websites may "incorrectly" identify your iPadOS Safari User Agent when used in one or other of its browsing modes - of which there are two - these being Desktop and Mobile.
When operating in Desktop mode, the User Agent will declare itself as Mac computer; in Mobile, the browser will appear to be iPadOS.
It’s easy to switch between modes if a website isn’t functioning correctly. From the desired web-page, touch the aA icon at the left of the Address Bar; this will reveal a menu. From the menu select Website Settings, then select (or deselect) Request Desktop Website, then tap Done. Now refresh the webpage.

Sounds as if some tried to log into your gmail account. They usually send those out when you log in on their site via a browser. It didn't have to come from your computer.
