Picking who and what subscriptions I have to share.

I don’t want some in the family sharing in my Apple TV. Music is fine but not everyone can partake in TV.

How can I accomplish this?, who gets the TV and who doesn’t? Can I do this action or is the family sharing plan set up to share all that I have or nothing?
