The directions you are following only reference profiles for betas of older versions of iOS. Not for iOS 18.

Here is how to Apple Beta — Unenroll Your Devices

The only paths out are to upgrade to iOS 18 when that eventually becomes available, by resetting to factory, or by resetting and restoring a backup created prior to loading the beta.

There is no downgrade that preserves data.

And any iCloud data that was converted to a newer format may not downgrade at all.

Restore your iPhone, iPad, or iPod to factory settings - Apple Support

If you also have the watchOS 11 beta, there is no way to unenroll that. You’ll need to keep iOS 18 or wait for watchOS 11.

Idk why apple just don’t do like downgrade option or a button to delete beta

Because it requires your device to be reset to Factory Settings and you will not be able to do that with a single button. There are many steps to follow. Being able to restore your device will depend on if you have a backup from iOS 17.

It has never been recommended to install it on your primary device and you will experience many problems with beta software including features that do not work yet. It is not intended for most users to install it and specifically for those that are willing to use the provided link detailed with the beta software to report each issue you come across while testing it. Those testers are well aware on the sacrifice required to test the beta as well as what they need to do to remove it and do not have a problem with it.

I’ll ignore any beta here.

For not-beta iOS, or macOS for that matter, implementing a downgrade doubles the effort involved in the development and testing process, as all the changes made during an iOS (or macOS) update have to be undone and backed out across all of the files and file contents involved in the upgrade.

This because not just iOS (or macOS) files are involved, but so too are any changes or additions made to user files and settings.

This added work effectively duplicating a backup, too. And a backup and restore process that gets tested. A lot.

Backups are the only way to mark data as being valuable, of course.
