You can’t. Your card details are encrypted and the key is not on your watch. This is part of the fraud protection that Apple Pay and Apple Wallet offer in case you iPhone is stolen.
A few banks/credit card issuers will show you the CVV security code in their mobile app and/or website. If your bank doesn’t, then the only source of seeing the number is on the back of the physical credit card.
