My son has had an account on our MacBook Air for several years now. he recently linked his new Apple ID from his phone to be able to get iMessages messaging onto the MacBook Air. He is now trying to sign out his Apple ID from that MacBook account because he didn’t like how some settings changed, but has been unable to because the option is grayed out. How can I assist him with this with my parental account?

If the option is greyed out this is due to screen time restrictions. You might want to go to settings>screen time>content and privacy restrictions>make sure that the switch at allow account changes is set to on
As the account of your son is under parental control, you might need to do this via your account
