Can you password protect an MS Word document created and saved on an Apple IPad?

How to password protect a document created using MS Word on an IPad 11 pro, where no options exist to do so within the upper right corner of the document ellipse choices.

Insofar as I can establish, the Microsoft Word App for iPadOS does not support password protection of documents.

Perhaps consider using Apple's Pages App for iPadOS - as password protection of documents is supported. Pages documents can be exported to MS Word format; Word documents can be similarly imported to Pages.
